When you are getting ready to cook a big meal, or really make any recipe, the first thing you need to do is prepare. I'm going to take a few minutes in this first section to show you how to set yourself up for success before you even start measuring ingredients.

Lesson 2

Batch Prep

For me, zero waste doesn't just mean reducing my physical waste. It also means being mindful not to waste my time and energy. When I prepare this meal, I batch certain similar tasks in order to save myself time and to reduce the number of times that I have to wash the same types of dishes.

Lesson 3

Pot Pie

Starring this veggie pot pie as the entree is one of the best life choices I have ever made! It is absolutely delicious, a total crowdpleaser, and even makes great leftovers. We start with this one because it has a few elements that need to be chilled before you assemble the whole thing and put it in the oven.

Lesson 4

Mashed Potatoes

At my house, it definitely would not be Thanksgiving Or Christmas dinner without mashed potatoes, and this recipe is absolutely spectacular! My Grandmother's Overnight Mashed Potatoes were just begging for a plant based makeover, and I am pleased to report that they are just as rich and smooth as ever!

Lesson 5

Sweet Potato Casserole

This recipe actually wasn't part of my traditional meal growing up. As a kid, I used to see it on TV and all I could think about was the fact that they were putting something on the dinner table that was covered in marshmallows and I thought "I probably need that." Well, I was right! 

Highlights:

These sweet, spicy and totally smooth potatoes are covered in a streusel topping and adorned with a crown of mini marshmallows.

Lesson 6

Green Bean Casserole

While I've always loved green beans, I have to admit that this dish wasn't really on my radar until probably about 3 years ago. Well I was seriously missing out! No condensed canned soups here! This made-from-scratch casserole is phenomenal and checks all the right boxes.

"Made-from-scratch" might sound extra fancy, but this dish comes together pretty quickly after you trim the beans.

Lesson 7

Delicious Kale Salad

This salad is loaded with flavor and definitely one of my favorite parts of the meal. It will make anyone like kale! Fully customizable, this salad is an opportunity for you to get a little creative. Or stick with my recipe, because it is spot on!

Lesson 8

Dinner Rolls

Bread and butter is my favorite food and these dinner rolls do not disappoint! In fact, these rolls don't even need butter as long as you are careful not to over-bake them. And the really good news, if you were scared to work with yeast, you won't be after this. It is easier than you think!

Lesson 9

Apple Crisp

Personally, I don't think you even need dessert after this incredible meal, and that is coming from someone who almost never passes up the chance to enjoy a sweet treat! I chose this apple crisp recipe because it is simple to prepare, makes your house smell incredible, and if you end up being too full after dinner, this will make a great breakfast anyway! 

Highlights:

Apples and a quick streusel-like topping, that bakes down and caramelizes - you really can't go wrong with this one!

  • Core, peel and slice the apples (want to save the scraps to make apple cider vinegar? Go for it!)
  • Prep that crumble topping ahead of time for super speedy assembly
  • Bake until your house is filled with warm,  cinnamon apple-y goodness!

When we first switched to a plant based diet, I remember feeling like I was always inconveniencing everyone. When it came to (extended) family dinners, suddenly we were bringing all of our own food because the rest of the family wasn't interested in switching to plant based options.
